Microbiological analysis
Microbiological studies conducted for yeast,
mold, total plate count and coliform revealed that no
microbial growth was detected in fortified cookies
except for control which recorded microbial load of
80 cfu/ml, much lower than the permissible limits. On
the basis of these findings, it could be contended that
the product is safe to consume due to the high heat
treatment and proper hygienic considerations during
preparation of high protein, sugar-free cookies.
