Since Ghana and in particular the Greater Accra region is be- coming a hub for business in the West African sub region, there is the need to assure consumers of the safety of the vegetables that are served to them. This research was to assess the effect of gamma radiation on microbial load of resident bacteria in cut carrot and lettuce with the view to decontaminate and extend shelf life. The results from this work would therefore bridge the knowledge gap that presently exists concerning the effect of ir- radiation on the keeping quality and microbial profile of cut-ve- getables produced in Ghana.
