The analysed composition of blue lupin is shown in Table 3. The protein content was 338g/kgDMandtheaminoacidcompositionshowedthatthecontentoflysineandthreonine was4.67 and 3.35g/16gN,respectively,where as the content of methionine was lower,being 0.62g/16g N. Total sugars amounted to 88g/kg DM, where especially sucrose and raffinose dominated the sugars and oligosaccharide concentrations. Only trace levels of starch were found. The total content of non-cellulosic polysaccharides reached a level of 323g/kg DM, with the galactose residue amounting to 175g/kgDM(54%ofNCP),showing that galactose is the main monomer in lupin, followed by arabinose, xylose and uronic acids. In addition, approximately 50% of the NCP were soluble. The cellulose content was 127g/kg DM, which resulted in a total content of non-starch polysaccharides of 450g/kg DM, while the lignin content was low (9g/kg DM).
