At the same time, it is also important to observe
that in the intermediate count at 1.5 h, the strain
with the best survival was L. plantarum from Chiapas
cheese. The most sensitive strain was L. acidipiscis.
However, this strain was able to survive thought
the 3 h of the experiment. Results obtained with L.
casei Shirota and L. plantarum strains are consistent
with those reported in the literature for other strains
of these LAB (Bertazzoni et al., 2004, Yu et al.,
2013), indicating the consistency of the results showed
previously
