Heat the oil in a large sauté pan. Add garlic and sauté until it starts to turn colour. Add the meat, and let it cook about half way through.
Push the content to one side, add the egg to the empty spot of the pan and break the yolk. Let it set a bit and then scramble.
Add vegetables, and toss to cook briefly. Add noodles, 2 Tbsp of the sauce, sugar, dark soy and white pepper. Toss to thoroughly distribute the sauce.
Let the noodles cook without stirring for a 10-15 seconds to toast the noodles, then flip the noodles and let it sit again until all liquid has been absorbed.
Plate and sprinkle extra white pepper on top. To be uber authentic, serve this dish along side the Standard Thai Condiments!
