The salmon with 15.2% fat (Table 1) had 76.7% unsaturated fatty acids, out of which 44.4% was monounsaturated and 23.4% were PUFA.The saithe with 1.8% of fat (Table 1) had 77.7% unsaturated fat, out of which 39.4% was monounsaturated and 33.8% was PUFA.
