3.3.3. Electrical charge
The electrical characteristics of the particles in the nonhomogenized
and homogenized MWP suspensions were similar
(Fig. 8b). The electrical charge went from negative to positive as the
pH was decreased from 8 to 2, with a point of zero charge around
pH 4.5. The isoelectric point for theMWPs is similar to the value reported
for the isoelectric point of whey protein coated fat droplets
(Demetriades & McClements, 1998). Consequently, these MWPs may
simulate the electrical characteristics of fat droplets in whey proteinstabilized
emulsion-based products.
