3. Results and discussion
3.1. Effect of thermal treatment on SJ color
The overall Ab510 values of SJ decreased with heating time at each of the three temperatures. This result indicates that temperatures over 80 °C can negatively affect anthocyanin stability. Ab510 did not significantly (p > 0.05) change in the first 20 min at 80 °C and was higher than that at 90 °C and 100 °C across the heating period ( Fig. 1a).
