2.3. Fish oil composition
The fish oil used (ESKIMO-3 Food®, Cardinova, Uppsala, Sweden), a natural, stable fish
oil, is stabilized with a mixture of natural tocopherols and contains about 25% saturated fatty
acids, 25% monounsaturated fatty acids and 41% polyunsaturated fatty acids in the form of
triglycerides. Of the total fatty acids, the omega-3 type constituted 37.4%, EPA 18% and
DHA 13% [10]. In vitro stability tests have shown the fish oil to be highly stable [11].
The fish oil is thoroughly purified from dioxin, organochlorine pesticides, polychlorinated
biphenyls (PCB), and heavy metals. The concentration of dioxin is below the detection level
(less than 0.4 pg/kg). Total dichloro-diphenyl-trichloroethane (DDT) and PCB are also below
the detection levels of 18 and 4.5
g L-1, respectively. Mercury is below the detection level
of 5
g L-1, as are lead and cadmium.
