and changes in the net charge (Offer & Knight, 1988) which associates
with pH of the system. Water holding capacity generally
associated with increased pH in the alkali region that would raise
the pH of the muscle (Thorarinsdottir et al., 2004). Phosphate
compounds, which exhibit good buffering capacity or least change
in pH, are often desirable (Lampila, 1992).
