2.1.1. Conventional pasteurization
Orange juice (250 mL) was transferred into a clean sterile closed conical flask made up of glass and was pasteurized at a temperature of 80 C for 10 min using a water bath. The treatment time of 10 min was decided based on the requirement of the FDA recommended log reduction. The flask was maintained at constant shaking to obtain uniform mixing of the samples throughout the treatment. The temperature of juice was monitored with a thermometer placed into the glass flask. Samples were cooled immediately after heat treatment and stored at 4 C till further analysis (maximum storage duration as 4 weeks, which was the typical time required for the sensory analysis using different panels).
