Combination of vanillin(700 mg L-1) with high hydrostatic pressure(HHP) (100 to 300 MPa) resulted in inhibition of B. cerous in liquid whole egg(Pina-Perez et al. 2009), Y Combination of HHP and enterocin reduced L monocytogenes populations by 1-log CFU g 1 in cooked ham when stored at 1 C for 84 days with temperature abuse for 24 h at room temperature at day 60 as compared with a 2-log increase under the same conditions for the untreated control(Marcos et al. 2008)
