2.7. Statistical analyses
Analysis of variance was conducted for each variable to investigate the effect of storage time and packaging type. The trial was performed in triplicate and The General Linear Model procedure (PROC GLM) of SPSS 13.0 was used to analyse the data. The microbiological loads, pH, TBARS, instrumental colour and sensory characteristics were evaluated and significance of differences was defined as P < 0.05 ( SPSS, 2001). The model used included the fixed effects of storage time, packaging conditions and headspace ratios. Microbial counts were expressed as log10 CFU/g and mean separations were obtained using Duncan's multiple range tests
