4. Conclusions
Under the conditions established in this study, the wrapping of half carcasses with polyethylene film during the first 24 h of chilling minimizes cooler shrink by up to 50%, reduces the cooling rate and hinders heat exchange. These conditions promote increased microbial occurrences and counts that impair the hygienic and sanitary condition
of the carcasses, which may be an obstacle for the practical application of this technology.
