The trace metal analyses revealed insignificant concentration of metals in these color extracts and therefore could have high potency as natural food colorants.
Although ANOVA study showed signifi- cantly higher (p ¼ 0.0033) degree of redness in jelly crystals with solvent-extracted color, the jelly crystals with SC-CO2 extracted color is nature-identical to the original peel color with low metal contamination.
From the stability study of jelly crystals, it was found that the R/Y of jelly crystals with solvent (p ¼ 0.1583) and SCCO2 (p ¼ 0.1161) extracted color decreases insignificantly over a two-month storage period at 4 C.
