The volume changes of apple cubes during drying were measured
by buoyancy method using petroleum benzine. Maximum
relative error was 5%. The samples were taken out the dryer and
the size was measured at specific time intervals chosen in accordance
with drying curve. Numerous samples were dried simultaneously
in the dryer. They were taken out one after another. The
sample used to measure the volume was not placed back in the
dryer. It could be dangerous because of liquid used. Measurements
were replicated three times.
