The equi-sweet concentrations determined for sucralose,
aspartame, cyclamate/saccharin 2:1 blend, and neotame are within
the limits proposed by the Brazilian legislation (Brasil, 2008).
However, stevia concentrations are higher than the limit, which can
be explained, according to Cardoso and Bolini (2007), by its strong
bitterness that may have influenced the sweetness perception,
which was also reported by Marcellini (2005), Cavallini (2005) and
Cardoso and Bolini (2007) in both reconstituted pineapple and
mango juices.
