3.7. Solubility
The results shown in Table 7 revealed that drying at 100 C
ensured the highest solubility of powder obtained from carrageenan
cubes, particularly for K12 and K12 þ iota, characterized by
values of 88.2 and 91, respectively. However, the differences caused
by drying temperature were not significant for K12 and K73. Solubility,
associated with the ability of particles to interact with water
(Selomulya and Fang, 2013), is an important quality attribute of
powders, and therefore should be taken into consideration while
forming recommendations for the preservation of carrageenan
products.
