Coffee consumption has been associated with higherconcentrations of serum total cholesterol and low den-sity lipoprotein cholesterol. Cafestol and kahwoel are twoditerpenes found in coffee oil. Diterpenes are the maincholesterol-raising compounds in coffee, but they are mostlyremoved by paper filters. Therefore, unfiltered coffee is asignificant source of diterpenes, whereas the consumptionof filtered coffee results in very little increase in serumcholesterol.
