(Fig. 2). However, the oxidation times for the
control and samples containing a-tocopherol and
quercetin were all shortened, compared to the
samples containing citric acid (Table 1). For the
samples lacking flavonols, the time to a conjugated
diene value of 0.7 was reduced from 93 h in
the presence of citric acid to 27 h in the control
sample at pH 5.4.
