We propose a new software application, made by the authors, aimed at monitoring and controlling oxygen inside the malaxation machine in extra virgin olive oil production, applicable to all the existing plants.

The application of the new software in the OCM (Oxygen Control Monitoring) system during malaxation allows to obtain very interesting results in terms of nutraceutical properties.

The amount of 30 L of oxygen introduced after 25 min from the beginning of the malaxation process showed the best results.
