2. Materials and methods
2.1. Test microorganisms
A panel of microbes available in the Nestlé Research Centre
culture collection that represented a broad range of common safety
and spoilage microbes was identified. The panel consisted of 4
Gram positive bacteria (Bacillus cereus, Listeria monocytogenes,
Staphylococcus aureus and Lactobacillus plantarum), 3 Gram negative
bacteria (Pseudomonas aeruginosa, Escherichia coli and Salmonella
enteriditis) and 2 yeast strains (Candida tropicalis and
Zygosaccharomyces rouxii).
