Both NMR and MRI remain expensive techniques, but they are increasingly
used in food research applications. Although we are still far
from introducing industrial NMR sensors on production lines, some
new devices have appeared (Bruker, 2012) and are opening the way for
time domain NMR experiments outside the laboratory (Capitani, Brilli,
Mannina, Proietti, & Loreto, 2009).
