The colonies were
counted and converted to logarithms (base 10) of colony forming
units per gram (log10 CFU/g). All plates were re-stored at 37 C and
recounted at 48 h. In addition, TSA plate counts (37 C, 24 h) were
performed to check the potential total counts of the “Big Six” after
HPP treatment, which may serve as the worst case scenario in “Big
Six” survivals (i.e. results may underestimate the HPP lethality).
