2.4. Analysis
Moisture, fat, protein and crude fibre of fresh coconut, dehydrated coconut, MR, VOR and CCWPs were estimated according to AOAC (1995). Sugar content was estimated according to Dubois, Gilles, Hamilton, Rebers, and Smith (1956). The neutral detergent fibre, acid detergent fibre and hemicelluloses were estimated according to Vansoest (1963).
The oil holding capacity of MR, VOR and CCWPs was determined according to Collins and Post (1981), water holding capacity and swelling capacity of MR, VOR and CCWPs was determined according to Goni and Martin-Carron (1998). The samples were ground and sieved to pass through 500 micro meter sieve before oil holding capacity, water holding capacity and swelling capacity were determined.
