There are many different kinds of bananas in Thailand, but the popular favourite, the king of bananas, is kluay nam wa. This variety is easily available year round in every part of the country and it is extremely versatile. It can be eaten raw or cooked, and the unripe fruit can be used to make many different kinds of foods. In Nakhon Si Thammarat, for example, cooks cut them up, skin and all, to include in a local version of kaeng phet kai spicy chicken curry.
