The release of pH 4.6-soluble peptides (Fig. 6A) and the sedimentation of protein (Fig. 6B) were investigated over a storage period of four weeks at 20 °C. The level of pH 4.6-soluble peptides in the samples containing 0.1 pkat mL−1 and 0 pkat mL−1 (control) enzyme remained constant at about 3.00 mm over the time investigated.
