Tomato (Lycopersicon esculentum L) is the world’s second
largest vegetable crop (Valencia et al. 2002). Worldwide,
about 37 million tons of tomatoes are processed in the
industry (Keskin 2012). A large part of the world tomato
crop is processed into tomato paste, which is used as an
ingredient in many products, such as soups, sauces and
ketchup (Sanchez et al. 2003).
