The results
showed that the contents of 50-GMP and 50-AMP, similar to the
change of total 50-nucleotides content, significantly (p < 0.05)
increased during drying, which could be due to the heat-degradation
of DNA or RNA in button mushroom during drying
(Charpentier et al., 2005). However, the content of 50-IMP
decreased during the desorption period in FD (from 0.44 to
0.38 mg/g dry weight) and the MVD period in FMVD (from 0.44
to 0.32 mg/g dry weight). This could be explained by thermal
sensitivity of 50-IMP, which could be easily degraded to ribose
(Van Boekel, 2006).
