The correlation coefficients between the prevalence
of E. coli and enterococci on the environmental surfaces in all three
zones and in the final product are presented in Table 4. No significant
correlation between the E. coli prevalence in zones 1 and 2,
and between zones 2 and 3, was found. Perhaps, E. coli may not endure
the cleaning and sanitizing treatment or else that it was carried
out effectively enough to eliminate the route of E. coli transfer
between environmental zones
