About 0.2 g ground samples (< 60 mesh) was suspended in 10 mL of water and incubated in a thermostatically controlled water bath at 95 oC in a tarred screw cap tube of 15 mL. The suspension was stirred intermittently over 30 min periods to keep the starch granules suspended. The tubes were then rapidly cooled to 20 oC. The cool paste was centrifuged, at 2200 x g for 15 min to separate the jell and supernatant. Then, the aqueous supernatant was removed and poured in to dish for subsequent analysis of solubility pattern. After this, the weight of the swollen sediment was determined.
