protein films, gelatin-based films possess high potential for
commercial application as food packaging films through their associated
and unique characteristics. Comparing with other materials
which have high melting temperatures, gelatin has an ability to
‘melt-in-the mouth’ and is thermoreversible. It also acts as thickening
agent, gelling agent, stabilizer, emulsifier and facilitates ease
of handling and usage.
