1.Gaeng Hang Lay (แกงฮังเล) is a Northern Thai Lanna curry that is well known within Thailand as a regional speciality. Sauce is enriched by the long, slow simmering of the sweet, fat-layered pork and warm spices. A handful of fresh ginger, some shallots, and several whole heads (yes) of peeled garlic cloves are added last, cutting through the oil. Some versions also add a little bit of pineapple or some peanuts for contrast. The resulting curry, however one varies it, is full-flavoured and complex, satisfyingly palate-coating without being cloying.
