Preparation scheme of green tea components was carried out
according to Yan et al. [16]. One hundred grams of regular
green tea and Se-enriched green tea were each extracted with
900 mL of deionized water and incubated in water bath at 100
◦
C for 2 h twice, respectively. The mixtures were filtered and
the supernatant were combined. The filtrates were evaporated
to half of the original volumes under vacuum. The crude
tea polyphenols, tea polysaccharides and tea proteins were
fractionated as shown in Fig. 1.
