candy was penetrated by a conical probe (radius: 44 mm; angular
degree: 45), at a speed of 2 mm/s, up to 35 mm of distance from
the contact point. The following indices were recorded from the
resulting forceedistance curve: F1 (first peak, corresponding to the
force necessary to punch the surface of the candy; N), F2 (second
peak, corresponding to the force necessary to punch the bottom of
the candy; N), and penetration energy (corresponding to the work
necessary to run through the whole candy, considering also the
external layers; N mm). Results are the average of at least 8
measurements.
