Adequate risk analysis and risk management ensure the maintenance of food safety. Analysis of food safety risk is widespread in the literature, legislation and standards of quality management, but there are few reports in the literature discussing this subject in practical terms. Risk analysis and assessment should have practical application in the food sector and should be made in a wide aspects by using different methods also in the area of HACCP system verification. The available literature of the subject concerns implementation of HACCP and indicates its positive impact on food safety. However, there is little studies presenting verification of the system in practice.
