In order to do comparison with the methods and results of other researchers, we define the temperature point when DGI reaches 10% (the loss of optical density is 10%) as the start temperature (Ts), and the temperature point when DGI reaches 95% (the loss of optical density is 95%) as the conclusion temperature (Tc). Ts and Tc of corn starch heated in different concentration of sucrose were showed in Table 1. With the increase of sucrose concentration (0–20%), Ts and Tc increased successively.
