The lower WAC of BWF could be attributed to the presence of lower amount of hydrophilic constituents in it (Akubor & Badifu,
2004). Addition of different gums to BWF significantly increased
WAC. The increased WAC of BWF after gums incorporation may be
due to the moisture retention ability of gums (Gomez, Ronda,
Coballera, Blanco, & Rosell, 2007).
