Considering the question asked to panellists about their
purchase intention: ‘‘Which of these shrimp samples would you
buy for your personal consumption?’’ it was observed that 15% (6
panellists) preferred the control sample; 37.5% (15 panellists)
preferred the sample treated with STPP, and 47.5% (19 panellists)
preferred the sample treated with phosphate blend.
Commercial experiences and researches have been demonstrating
that phosphates can improve sensory quality and increase
consumer’s preference (Gonçalves & Ribeiro, 2008a; Gonçalves
et al., 2008).
