2.4. Texture
The texture of blueberries was evaluated using a texture analyser
(TA. XT-Plus, Stable Microsystems Ltd., Surrey, UK). The
puncture strength of skinwas measured with the use of a P/2 2mm
diameter cylinder probe, a 50 N load cell, and a film support rig
(HDP/FSR) on a Heavy Duty Platform (HDP/90). The following
analyser settings were applied in the puncture mode: speed e
1.0 mm/s, distance e 10 mm. During the puncture test, the
maximum force to sample rupture was recorded and the work
required to puncture the sample were calculated
