Guar gum is a water-soluble, non-starch polysaccharide galactomannan
found in the endosperm of the seed from the Indian cluster
bean Cyamopsis tetra-gonoloba. Galactomannan consists of a b-(1–
4)-linked D-mannopyranosyl backbone, partially substituted with
a-(1–6)-linked D-galactopyranosyl side chains
