Phenolic compounds in broccoli florets play an important role in scavenging free radicals, and have many biological activities in human body (Cartea & Velasco, 2008).Postharvest treatments
can be used to enhance antioxidant capacity in broccoli. For example, 1-MCP treatment prevented the decrease of vitamin C and carotenoids (Yuan et al., 2010), and ethanol treatment resulted in
better retention of total phenolic contents in broccoli florets (Xu, Chen et al., 2012).
