for both varieties treated at E values >30 kV cm
1 (pulse
width of 13 and 15 ls at frequencies of 25 and 50 Hz),
microbial reduction of 53-log10 was achieved after the
fourth day of storage and this level was maintained the
during 21 days of storage maybe due to irreversible cellular
damage. Buckow et al. (2013) reported that when
the pores on the surface of the membrane are numerous
and large, an irreversible damage is caused leading to the
destruction of the membrane with subsequent cell death.
