3.4. Antifungal activity of coating formulas
Limes coated with (i) extracted lignin from 40% (w/w) NaOH or
(ii) extracted lignin from 40% (w/w) NaOH in 50% (v/v) ethanol
showed higher antifungal activity than limes coated with commercial
lignin (Table 4). The positive and negative effects of
different coating solutions on antimicrobial activity, weight loss
and color change in comparison with uncoated fruits (control
samples) are given in Table 4. This study demonstrated that coating
formulas namely (i) 0.8% xanthan gum & 1.50% extracted lignin
from 40% (w/w) NaOH, (ii) 0.4% xanthan gum & 1.50% extracted
lignin from 40% (w/w) NaOH in 50% (v/v) ethanol and (iii) 0.8%
xanthan gum & 1.50% extracted lignin from 40% (w/w) NaOH in 50%
(v/v) ethanol had the potential to maintain weight loss and color
change and these coating formulas also exhibited higher antifungal
activities.
