Mass change of frozen bread
The total-mass change of frozen bread was monitored with
whole (triplicates) and half-cut (duplicates) samples. At certain
storage time points, the plastic bags containing the frozen bread
were taken out of the freezer. The bread was then removed from
the bags and, after the ice on the bread surface was gently shaken
off, placed into new dry plastic bags. This prevented the ice in the
original bags from thawing back into the bread and minimized the
condensation of environmental moisture onto the bread surface
while it was still cold. The dry-surfaced frozen bread samples were
hence weighed. Subsequently the samples were put in another set
of new plastic bags and placed back into the freezer for storage until
the next evaluation. The same procedure was repeated daily during the first week and, thereafter, at longer intervals over the storage up
to w4 months.
