Color of meat could be measured by the Hunter L*a*b*
color reflectance measurement system. In this measurement
system, the L* value (0 and 100) represents the
difference between white and black; the a* value (+50
and -50) represents the green (+50) to red tone (-50);
the b* value (-50 and +50) represents the blue (-50) to
the yellow tone (+50) (Feiner, 2006; HunterLab, 1996;
HunterLab, 2000).
