Total yield and concentration of 2AP in Pandan leaves extracts
were highly affected by differences in particle size and drying pretreatment.
Numbers of epidermal cells were disrupted by grinding
and drying process and therefore can affect the papillae structure
where 2AP was located in Pandan leaves. In spite higher yield and
2AP concentration were achieved by Soxhlet extraction when compared
to SC-CO2, the extracts obtained by supercritical extraction
were pure, without contaminates due to the high selectivity nature
of SC-CO2. The amount of 2AP in the extracts of pre-treated Pandan
leaves was in the range of 0.04±0.01 to 0.45±0.01 ppm. Grinding
and freeze drying method revealed the best pre-treatments for
supercritical extraction method. Further work will consider isolating
the 2AP compound to be added to food matrices
