2.2. Chemical analysis
For all products, sampling for chemical analysis took place the day
after manufacturing.Chemical analyses were conducted in duplicate to determine the
following: fat content by NMKL method 131 (1991), water content by
NMKL method no. 23 (1974), salt content (chloride) by AOAC official
method no. 935.47 (1995), water activity by AOAC official method
978.18 (1995), protein by AOAC official method 992.15 (1995), pHdetermined
according to ISO no. 2917 (1974) and sodium content by
AOAC official method 976.25 (1995).
