Physical characteristcs of chicken nuggets
The analysis of Water Holding Capacity were performed according. The texture analysis was carried out by Texture Analyzer equipped with a probe (needle). Implementaton of analysis procedured were performed according to the Hardiman (1991).Test of sensory characteristcs of Chicken Nugget
Sensory tests include i.e. texture, feel of sandyness and color. Sensory test is using scoring method with 15 untrained panelists. Panelists provide an assessment in accordance with the instructons provided (Kartka et al ., 1998).
The data of physical charateristc from the randomized design were analysed by analisis of variance. Duncan’s multple range test and critcal diference were determined at the 5% signifcance level. Sensory test data were analyzed by non-parametric analysis
