Examples of microstructures of dried carrot samples as determined by XRT are depicted in Fig. 2. The contrast in these images is given by the difference in X-rays absorption properties of air and the solid matrix. The XRT images show the dry matrix consisting of pores and cavities left after sublimating the ice from the carrot tissue during the freeze-drying.
